Delightful Japanese sweet bread with a crispy cookie shell and subtle matcha flavor, perfect for snacks or desserts.
Ingredients
Scale
- 3 cups all-purpose flour
- 1/4 cup sugar
- 1/2 teaspoon salt
- 2 teaspoons instant yeast
- 1/2 cup milk, warm
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1/2 cup matcha powder
- 1/2 cup butter, softened (for cookie dough)
- 1 cup powdered sugar (for cookie dough)
- 1 egg (for egg wash)
Instructions
- In a large bowl, mix the flour, sugar, salt, and yeast.
- Add the warm milk, melted butter, and egg. Mix until well combined.
- Knead the dough for about 10 minutes until smooth, then let rise for 1 hour until doubled in size.
- While the dough rises, prepare the cookie dough by creaming the softened butter and powdered sugar, then adding matcha powder and egg.
- Once the bread dough has risen, punch it down and divide it into equal pieces.
- Roll each piece of dough into a ball and then coat it with the matcha cookie dough.
- Place on a baking sheet lined with parchment paper and let rise for an additional 30 minutes.
- Preheat the oven to 350°F (175°C).
- Brush the tops with egg wash, then bake for 15-18 minutes until golden.
- Allow to cool slightly before serving.
Notes
Serve warm for the best flavor. Matcha powder can clump, sifting it before use helps improve texture.
