- 2 large eggs

- 1/4 cup matcha powder
- 1 teaspoon vanilla extract
- 1 cup heavy cream

Instructions
- In a bowl, mix together the flour, eggs, milk, sugar, matcha powder, and vanilla extract to create a smooth batter.
- Cover the batter and let it rest in the refrigerator for at least 30 minutes.
- Heat a nonstick skillet over medium heat and lightly grease with butter.
- Pour a small amount of batter into the skillet and swirl to coat the bottom evenly.
- Cook until the edges begin to lift and then flip; cook for an additional minute.
- Repeat the process until all the batter is used, stacking the crepes on a plate.
- Whip the heavy cream with the powdered sugar until it holds soft peaks.
- Spread a layer of whipped cream onto each crepe and stack them together.
- Once all crepes are stacked, chill in the refrigerator for at least an hour before slicing.
- Slice thinly, dust with powdered sugar or matcha, and serve with ice cream or tea.
Notes
For best texture, let the batter rest overnight. Feel free to mix in flavored whipped creams or fresh fruits between layers.
