- 1 cup chickpeas (dried or canned)
- 1/4 cup tahini
- 1/4 cup freshly squeezed lemon juice
- 1–2 cloves garlic
- 1/4 cup extra virgin olive oil
- Salt, to taste
- Paprika or cayenne pepper (optional)
- Roasted red peppers (optional)
- Fresh herbs (optional)
- Cumin (optional)
Instructions
- If using dried chickpeas, soak overnight, then rinse and cook until tender. If using canned, drain and rinse.
- In a blender, combine tahini and lemon juice, blending until creamy.
- Add garlic and a pinch of salt, blending to combine.
- Gradually add chickpeas while drizzling in olive oil and ice water, blending until smooth.
- Adjust flavor to taste by adding more lemon, garlic, or salt as needed.
- Serve in a bowl, drizzle with olive oil, and garnish with paprika or herbs.
Notes
For a creamier texture, use ice-cold water during blending. Experiment with flavor additions for variety.
