Description

A delicious and versatile creamy hummus recipe made with chickpeas, tahini, and fresh ingredients that can be enjoyed as a dip, spread or part of a meal.


Ingredients

Scale
  • 1 cup chickpeas (dried or canned)
  • 1/4 cup tahini
  • 1/4 cup freshly squeezed lemon juice
  • 12 cloves garlic
  • 1/4 cup extra virgin olive oil
  • Salt, to taste
  • Paprika or cayenne pepper (optional)
  • Roasted red peppers (optional)
  • Fresh herbs (optional)
  • Cumin (optional)

Instructions

  1. If using dried chickpeas, soak overnight, then rinse and cook until tender. If using canned, drain and rinse.
  2. In a blender, combine tahini and lemon juice, blending until creamy.
  3. Add garlic and a pinch of salt, blending to combine.
  4. Gradually add chickpeas while drizzling in olive oil and ice water, blending until smooth.
  5. Adjust flavor to taste by adding more lemon, garlic, or salt as needed.
  6. Serve in a bowl, drizzle with olive oil, and garnish with paprika or herbs.

Notes

For a creamier texture, use ice-cold water during blending. Experiment with flavor additions for variety.
