Description

A cozy and cheesy taco casserole perfect for fall gatherings.


Ingredients

  • 1 package of frozen taquitos
  • 1 lb ground beef (or ground turkey/black beans for vegetarian option)
  • 1 packet taco seasoning (or 1 tsp cumin, 1 tsp smoked paprika, 1 tsp chili powder)
  • 2 cups salsa (mild, medium, or hot)
  • 2 cups shredded cheddar cheese (or Monterey Jack, Colby, or spicy pepper cheese)
  • 1 can corn (drained)
  • 1 can black olives (sliced)
  • Green onions (optional, for garnish)

Instructions

  1. In a slow cooker, layer frozen taquitos at the bottom.
  2. Cook ground beef in a skillet, then sprinkle with taco seasoning and mix well.
  3. Spread the seasoned ground beef over the taquitos.
  4. Pour salsa evenly over the mixture.
  5. Cook on low for 4-6 hours or high for 2-3 hours.
  6. In the last 15-20 minutes, top with shredded cheese and allow to melt.
  7. Serve hot, garnished with green onions if desired.

Notes

Make ahead by assembling the night before and refrigerating the slow cooker insert. Adjust salsa for moisture if needed.
