Ingredients

- 1 package of frozen taquitos
- 1 lb ground beef (or ground turkey/black beans for vegetarian option)
- 1 packet taco seasoning (or 1 tsp cumin, 1 tsp smoked paprika, 1 tsp chili powder)
- 2 cups salsa (mild, medium, or hot)
- 2 cups shredded cheddar cheese (or Monterey Jack, Colby, or spicy pepper cheese)
- 1 can corn (drained)
- 1 can black olives (sliced)
- Green onions (optional, for garnish)
Instructions
- In a slow cooker, layer frozen taquitos at the bottom.
- Cook ground beef in a skillet, then sprinkle with taco seasoning and mix well.
- Spread the seasoned ground beef over the taquitos.
- Pour salsa evenly over the mixture.
- Cook on low for 4-6 hours or high for 2-3 hours.
- In the last 15-20 minutes, top with shredded cheese and allow to melt.
- Serve hot, garnished with green onions if desired.
Notes
Make ahead by assembling the night before and refrigerating the slow cooker insert. Adjust salsa for moisture if needed.
