Ingredients

  • 1 ½ cups brewed coffee
  • 1 cup milk (or dairy-free option)
  • 2 eggs (or flax/chia seeds for vegan)
  • 1 tablespoon sweetener (maple syrup, honey, or brown sugar)
  • 1 ½ teaspoons baking powder
  • 1 teaspoon cinnamon
  • Optional add-ins: nuts, seeds, dried fruits, chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brew your coffee.
  3. In a large mixing bowl, combine rolled oats, baking powder, cinnamon, and salt.
  4. In another bowl, whisk together milk, eggs, and sweetener.
  5. Pour the brewed coffee into the wet mixture and stir well.
  6. Mix wet and dry ingredients until combined. Fold in optional ingredients if desired.
  7. Pour the mixture into a greased baking dish and bake for 30-35 minutes until golden brown.
