Instructions
- Preheat your oven to 400°F (200°C) and grease a 9-inch square baking dish or cast-iron skillet with butter or cooking spray.
- In a large mixing bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar (if using), ensuring there are no lumps.
- In another bowl, beat the eggs and mix in the milk and vegetable oil (or melted butter) until well combined.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined; a few lumps are okay.
- Pour the batter into the prepared dish and bake for 20-25 minutes, or until the top is golden brown and a toothpick comes out clean.
- Let the cornbread cool in the pan for a few minutes before slicing. Serve warm and enjoy!
