For the batter:

- 1 cup confectioners sugar

Instructions
- Preheat the oven to 375°F (190°C) and grease and flour 24 (3-inch) madeleine molds.
- In a medium bowl, beat the eggs, vanilla extract, and lemon zest using an electric mixer on high speed for 5 minutes.
- Gradually mix in the confectioners sugar and continue mixing for an additional 5 to 7 minutes until the mixture is thick and satiny.
- In a separate bowl, sift together the flour and baking powder.
- Sift 1/4 of the flour mixture over the egg mixture and gently fold it in.
- Fold in the remaining flour mixture in quarters, ensuring everything is well blended.
- Carefully fold in the melted and cooled butter until fully incorporated.
- Spoon the batter into the prepared molds, filling each about 3/4 full.
- Bake in the preheated oven for about 10 to 12 minutes, or until the edges are golden and the tops spring back when touched.
- Allow the Madeleines to cool in the molds for 1 minute before loosening them with a knife and inverting them onto a rack to cool completely.
- For an elegant finish, sift confectioners sugar over the tops or melt semi-sweet chocolate chips and dip the tips of the Madeleines in chocolate.
