Description

These delightful little French sponge cakes are light, fluffy, and perfect for enjoying with coffee or tea. Their buttery texture, paired with a hint of lemon zest, makes them an elegant treat for any occasion.

For the batter:

  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest
  • 1 cup confectioners sugar
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 cup butter, melted and cooled

Instructions

  1. Preheat the oven to 375°F (190°C) and grease and flour 24 (3-inch) madeleine molds.
  2. In a medium bowl, beat the eggs, vanilla extract, and lemon zest using an electric mixer on high speed for 5 minutes.
  3. Gradually mix in the confectioners sugar and continue mixing for an additional 5 to 7 minutes until the mixture is thick and satiny.
  4. In a separate bowl, sift together the flour and baking powder.
  5. Sift 1/4 of the flour mixture over the egg mixture and gently fold it in.
  6. Fold in the remaining flour mixture in quarters, ensuring everything is well blended.
  7. Carefully fold in the melted and cooled butter until fully incorporated.
  8. Spoon the batter into the prepared molds, filling each about 3/4 full.
  9. Bake in the preheated oven for about 10 to 12 minutes, or until the edges are golden and the tops spring back when touched.
  10. Allow the Madeleines to cool in the molds for 1 minute before loosening them with a knife and inverting them onto a rack to cool completely.
  11. For an elegant finish, sift confectioners sugar over the tops or melt semi-sweet chocolate chips and dip the tips of the Madeleines in chocolate.
