- 4–5 Fresh kiwis
- 2 cups Granulated sugar
- 1 cup Water
- 1 tablespoon Lemon juice
- Baking sheet
- Parchment paper
Instructions
- Prepare the kiwis by peeling and slicing them into thin rounds, about ¼ inch thick.
- In a medium saucepan, combine sugar, water, and lemon juice. Heat on medium and stir until the sugar dissolves, then bring to a gentle simmer.
- Add the kiwi slices to the syrup and simmer for 10-15 minutes until tender but still holding their shape.
- Using a slotted spoon, transfer the kiwi slices to a lined baking sheet to cool and dry for several hours or overnight.
- Optionally, sprinkle granulated sugar on the dried kiwi slices before storing them in an airtight container.
