A visually stunning and refreshing lemonade that changes color and is packed with antioxidants.

- 2 tablespoons dried butterfly pea flowers
- 1 cup boiling water
- 1/2 cup freshly squeezed lemon juice
- 1/4 to 1/2 cup honey or sugar (adjust to taste)
- Ice cubes
- Lemon slices for garnish
- Fresh mint leaves (optional)
Instructions
- In a heat-proof bowl, add the dried butterfly pea flowers and pour the boiling water over them. Let steep for 10 minutes, then strain the liquid into a separate container, discarding the flowers.
- Allow the blue tea to cool to room temperature, then stir in honey or sugar until fully dissolved. Gradually add the freshly squeezed lemon juice.
- Fill glasses with ice cubes and pour the butterfly pea lemonade over the ice, watching the color change as the lemon juice mixes in.
- Add lemon slices on the rim and mint leaves for garnish.
Notes
For variations, swap sweeteners or add herbs for extra flavor. The drink can be made ahead of time but is best served fresh.
