- 1 cup fresh blueberries
- 1 cup water
- 1/2 cup sugar
- 1 tsp agar-agar powder
- Food coloring (optional)
Instructions
- In a mixing bowl, combine fresh blueberries, water, and sugar. Use a whisk to mash the blueberries until smooth.
- Pour the mixture into a saucepan and heat over medium heat, stirring continuously until it simmers.
- Sprinkle the agar-agar powder into the mixture and whisk until fully dissolved.
- If desired, add food coloring for a more vibrant hue and stir well.
- Remove from heat and let cool for a few minutes. Transfer to a dropper or squeeze bottle.
- Fill a bowl with ice-cold water. Drip the blueberry mixture into the cold water using the dropper to form small globules.
- Let the boba sit in the cold water for about 5 minutes to firm up, then strain and store on a baking sheet lined with parchment paper.
Notes
For a thicker boba, consider increasing the agar-agar to 1.5 teaspoons. Adjust the sugar based on your sweetness preference.
