- 4 medium potatoes, sliced
- 1/4 cup olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup vegetable broth
- Optional: fresh herbs for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and slice the potatoes into thin rounds.
- In a large skillet, heat olive oil over medium heat. Add diced onions and cook until translucent.
- Add minced garlic and sauté for another minute.
- Layer the sliced potatoes in the skillet, seasoning with paprika, salt, and pepper.
- Pour the vegetable broth over the potatoes, covering them evenly.
- Cover with a lid and cook on the stove for 10 minutes.
- Transfer to the preheated oven and bake for 30-35 minutes until the potatoes are tender.
- Garnish with fresh herbs if desired and serve hot.
Notes
For a healthier version, replace butter with olive oil and add more vegetables such as bell peppers or spinach.
